We had an impromptu dinner party of FISH TACOS upon return from the lake. We brought home fresh butterfish from the lake (one of Lake Malawi’s tastiest fish), which Jon attempted to filet having had no experience and no prior instruction. Everyone pitched-in on the cooking, which was great b/c making enough tortillas for 6 people alone could take all night. It was a little nerve racking along the way, being our first time filleting and cooking butterfish, at one point we were questioning our overconfidence in inviting so many people for a meal which truely was an experiment. They were all happy guinea pigs in the end. Two of our guests had never had Mexican food before...even thought "Guacamole" was the local Malawian word for avocado sauce!
